FOR THE FIRST of many great events on the TASTE PORTUGAL programme, Australian-born Brett Graham will be welcoming Austrians Hans Neuner and Dieter Koschina into his kitchen at Notting Hill’s the Ledbury to cook up a dégustation dinner to remember. 

With each chef having a proud two Michelin stars to his name, this will be a feast of stellar quality. Graham, who grew up on his grandfather’s farm and apprenticed in a local fish restaurant aged 15, is known for his modern French cuisine, rooted in classical principles. Koschina, who has been head chef at Vila Joya in the Algarve since 1990, is led by his guiding culinary philosophy: ‘First the flavour, then the presentation.’

For Neuner, however, who heads the kitchen at Ocean, at the Vila Vita Parc Resort & Spa also in the Algarve, it is as much about appearance as it is taste. The platters that make it to his tables are exquisitely designed and might just as well adorn a plinth in a gallery. All three chefs place a strong emphasis on seafood. 

They will be joined at the Ledbury by the resident head sommelier, Anya Brieg, and Taste Portugal’s executive sommelier, Antonio Lopes, who will work together to create a harmonised wine list to accompany the event.
